Moroccan Cooking Workshop

1. Welcome & Introduction (15 mins)
- Meet at the cooking school with mint tea & Moroccan pastries
- Brief overview of the day’s menu and Moroccan culinary traditions
2. Guided Market Tour (30 mins)
- Visit a local souk (market) with your chef instructor
- Learn to select:
- Fresh spices (cumin, saffron, ras el hanout)
- Seasonal vegetables
- Meat (for tagine or couscous)
- Traditional breads & olives
- Cultural insights: Bargaining tips and market etiquette
3. Hands-On Cooking Session (2 hours)
Participants prepare a full Moroccan meal:
- Starter: Make Za’alouk (smoky eggplant dip) or Harira soup
- Main Dish: Choose one:
- Chicken tagine with preserved lemons & olives
- Lamb couscous with seasonal vegetables
- Vegetable pastilla (filo pastry pie)
- Side: Prepare Moroccan salads (e.g., carrot & orange, tomato-cucumber)
- Bread: Shape and bake khobz (traditional round bread)
4. Meal & Cultural Exchange (30 mins)
- Enjoy the prepared dishes together in a traditional setting
- Learn proper Moroccan dining customs (eating with bread, tea rituals)
- Q&A with the chef about techniques and regional variations
5. Farewell (15 mins)
- Receive recipe cards and spice samples
- Group photo in traditional cooking attire (optional)
